I don't like sweet potatoes but I love this dish. It's a great departure from the recipe with the marshmallows. You can use canned yams if you wish but I have found that fresh tastes best. Ingredients:
4 cups sweet potatoes, drained and mashed |
1/2 cup butter (or margarine) |
1/2 cup brown sugar |
3 1/2 ounces coconut |
1 teaspoon vanilla |
2 eggs |
1 1/4 cups crushed corn flakes |
1/2 cup brown sugar |
1/2 cup butter |
1 cup crushed pecans or 1 cup walnuts |
Directions:
1. Heat oven to 350°F. 2. Mix together all ingredients (except topping) and place in baking dish. 3. Mix together topping ingredients and spread over sweet potato mixture. 4. Bake until top is brown, about 25 minutes. |
