Ingredients:
4 large sweet potatoes |
3 eggs |
1 1/2 teaspoons salt |
1/8 teaspoon pepper, ground |
1 teaspoon oil |
Directions:
1. Parboil potatoes until tender. 2. Peel skin and mash. 3. Next, mix eggs, salt, pepper. 4. Heat oil in skillet and add a pinch of flour for oil testing. 5. Drop potato mixture into skillet. Brown on both sides. 6. Flatten down when you flip them. 7. Add butter and honey and eat like a pancake. **I like homemade maple syrup with mine. |
