Ingredients:
1 3/4 cup(s) all-purpose flour |
1 1/2 cup(s) sugar |
11/2 teaspoon(s) cinnamon |
1/2 teaspoon(s) nutmeg |
1/2 teaspoon(s) baking soda |
1/2 teaspoon(s) baking powder |
1/2 teaspoon(s) salt |
2 eggs |
1 cup(s) mashed sweet potatoes |
1/2 cup(s) canola oil |
1/3 cup(s) water |
1 teaspoon(s) vanilla sugar |
Directions:
1. Preheat oven to 350. In a large bowl, combine the flour, sugar, cinnamon, nutmeg, baking soda, baking powder, and salt and mix well. In a small bowl, combine the eggs, sweet potatoes, oil and water. Stir into the dry ingredients just until moistened. Spoon into a greased and floured 9x5-inch loaf pan. Sprinkle vanilla sugar over the top of the loaf. Bake at 350 for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from the pan to a wire rack. |
