Ingredients:
2 cups all-purpose flour |
1 1/4 teaspoons baking soda |
1 cup sugar |
3/4 teaspoon salt |
1 teaspoon ground cinnamon |
1 teaspoon ground cloves |
1/3 cup vegetable oil |
1/4 cup milk |
2 eggs |
1 cup cooked, mashed sweet potatoes |
2/3 cup raisins |
2/3 cup chopped pecans |
Directions:
1. Sift together dry ingredients and spices; make a well in center of mixture. Set aside. 2. Combine oil, milk, and eggs; mix well. Stir in potatoes, raisins, and pecans; add to dry ingredients, stirring just until moistened. 3. Spoon mixture into a well-greased 8 1/2- x 4 1/2- x 3-inch loaf pan. Bake at 350° for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan, and cool completely. |
