Perfect use for left over sweet potatoes. Cinnamon and nutmeg make this a wonderful tasty sweet bread.
Ingredients:
3 cups sugar
1 cup oil
4 eggs
31/2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
2/3 cups water
2 cups cooked, mashed sweet potatoes
1 cup chopped pecans
Directions:
1. beat sugar and oil
2. beat in eggs
3. add dry ingredients alternately with water to egg mixture
4. stir in sweet potatoes and nuts.
5. pour into 3 greased loaf pans
6. bake at 350 degrees for 1 hour or until knife comes out clean.
