Perfect use for left over sweet potatoes. Cinnamon and nutmeg make this a wonderful tasty sweet bread. Ingredients:
3 cups sugar |
1 cup oil |
4 eggs |
31/2 cups flour |
2 teaspoons baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
2/3 cups water |
2 cups cooked, mashed sweet potatoes |
1 cup chopped pecans |
Directions:
1. beat sugar and oil 2. beat in eggs 3. add dry ingredients alternately with water to egg mixture 4. stir in sweet potatoes and nuts. 5. pour into 3 greased loaf pans 6. bake at 350 degrees for 1 hour or until knife comes out clean. |
