From the American Diabetes Association. sweet potatoes, low-calorie margarine, sugar, nutmeg, allspice, salt, flour, egg substitute, cvt Ingredients:
18 oz sweet potatoes, peeled and cooked |
2 tbsp light margarine |
3 tbsp sugar |
1 tsp nutmeg |
1 1/2 tsp allspice |
1/4 tsp salt |
5 tbsp flour |
1 cup egg substitute |
Directions:
1. Boil the sweet potatoes until soft and mash thoroughly. Stir in the margarine. 2. Heat the oven to 425 degrees F. Add all ingredients and mix thoroughly. 3. Pour the batter into a nonstick loaf pan and bake for 30 minutes, or until a knife inserted in the center comes out clean. 4. (Note: Ounces of sweet potato in original recipe were not specified, but 18 ounces in the analyzer produced comparable fiber and calories.) |
