Saw this vegetarian recipe on the Net on a vegetarian group. The ingredients intrigued me and it came out very tasty for the melange of stuff it had in it; especially using taco seasoning to spice it up! Besides colorful, healthy too. Read more .I simply used precooked canned peas in the recipe Ingredients:
1 1/2 lbs sweet potatoes peeled and cut in chunks |
1 large onion large diced |
2 tbs of taco seasoning ( from pkg or bottle ) |
2 tbs olive oil |
1 can of black eye peas rinsed and drained |
1 small head or broccoli florets |
garnish: chopped cilantro, shredded cheddar cheese, chopped tomatoes, lime wedges, salsa etc |
Directions:
1. In a bowl toss sweet potatoes with onion olive oil and seasoning 2. Stir to coat 3. Place in a layer on roasting pan and roast 30 minutes at 375F, turning halfway during cooking 4. meanwhile cook/steam broccoli till florets almost tender 5. Place peas in a bowl and heat up 6. Gently combine peas with the potato onion mixture 7. Place broccoli in a bowl, top with the potato mixture 8. Garnish as desired with suggested items 9. Note: I gently mixed all together and added more taco seasoning to my taste |
