Went to an Italian restaurant and fell in love with the Soup of the Day, this is my attempt to recreate it! Ingredients:
4 cups chicken broth |
2 lbs sweet potatoes |
1 acorn squash |
1 onion |
1 cup carrot |
4 tablespoons nutmeg |
1 tablespoon ginger-garlic paste |
1 cup heavy cream |
Directions:
1. Saute Onions. 2. Cube Sweet Potatoes, Acorn Squash and Carrot. 3. Add to Chicken Broth. 4. Boil 25 min or until tender. 5. Puree with immersion blender or in a food processor. 6. Return to pot. 7. Add nutmeg and Garlic Ginger Paste (I used garlic ginger paste because it's what i had on hand, I didn't realize I was out of ginger). 8. Add heavy cream and heat thoroughly. |
