Ingredients:
2 cups all-purpose flour |
1/3 cup yellow cornmeal |
2 1/2 teaspoons baking powder |
1/2 teaspoon salt |
1/3 cup chilled butter or stick margarine, cut into small pieces |
1 cup mashed cooked sweet potato |
1/2 cup fat-free milk |
2 tablespoons honey |
Directions:
1. Preheat oven to 400°. 2. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, cornmeal, baking powder, and salt in a bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Add sweet potato, milk, and honey; stir just until moist. 3. Turn dough out onto a heavily floured surface; knead lightly 5 times. Pat dough into a 9-inch square; cut into 16 squares. Place biscuits on a baking sheet. Bake at 400° for 20 minutes or until golden. |
