easy and very tasty, Ingredients:
1 cup flour |
2 1/2 tsp baking powder |
heaping 1/2 tsp salt |
3 tablespoons lard |
8 oz ( 1 cup ) cooked sweet potatos |
1/3 to 1/2 cup milk |
Directions:
1. Sift dry ingredients together into a large bowl 2. Add the lard and work with fingertips until everybit of the flour is combined with the lard. 3. Puree the sweet potato with just enough milk to make a smooth mixture,, not too liquid,, . 4. Beat into the flour stirring vigorously 5. Turn dough out onto a lightly floured surface 6. Knead well,, more than with regular biscuits , about 30 turns. 7. Pat or roll out until 3/8 thick and cut into 2 rounds. 8. Bake at 450 on an ungreased baking sheet for about 12- 15 min. or until tops and bottoms are browned. 9. I serve with honey butter,, but butter is fine too!! |
