Haven't tried these yet but they sound easy and very tasty!! Ingredients:
2 cups self rising flour |
1/4 cup brown sugar |
1 teaspoon ground cinnamon |
1 teaspoon ground ginger |
7 tablespoons cold butter |
3 tablespoons shortening |
1 cup mashed sweet potatoes |
6 tablespoons milk |
Directions:
1. Mix together the first four ingredients. Cut in 4 T. butter and shortening until it's crumbly. 2. Mix the sweet potatoes and milk, then stir in the crumbs until just mixed. Knead on a floured surface 10 times. 3. Roll out to 1/2 inch thick and cut with a 2 1/2 inch floured biscuit cutter. Put them on an ungreased baking sheet. 4. Melt the rest of the butter and spread over the dough. Bake at 425 degrees for 10-12 minutes. Cool on wire racks. |
