3/4 cup mashed sweet potatoes |
3 -4 tablespoons margarine, melted |
2/3 cup milk |
1 3/4-2 cups flour, divided |
4 teaspoons baking powder |
1 tablespoon brown sugar |
1/2 teaspoon salt |
milk for glaze |
nutmeg (to garnish) |
Directions:
1. Mix sweet potatoes and margarine in a medium bowl; stir in 2/3 cup milk. 2. Mix in 1 3/4 cup flour, baking powder, brown sugar, and salt. Mix in remaining 1/4 cup flour if dough is too sticky to handle easily. 3. Knead dough on floured surface 5 to 6 times. Roll on floured surface to 1/2 inch thickness; cut into 18 biscuits with a 2-inch cutter. 4. place close together on baking sheet. Brush lightly with milk and sprinkle with nutmeg. 5. Bake at 425 for 12-15 minutes. |
