These look like they would be a great appetizer for fall. I'm putting it here for safe keeping. Ingredients:
1 lb sweet potato |
1 egg, beaten |
1 small onion, minced |
1 tablespoon milk |
1 tablespoon butter |
3/4 teaspoon ginger |
2 tablespoons flour |
1 tablespoon chopped fresh parsley |
1 pinch cayenne |
1/4 cup oil (for frying) |
2 cups breadcrumbs |
Directions:
1. Cook sweet potatoes. Mash them with everything except the oil and breadcrumbs. 2. Heat the oil over medium heat. Place the breadcrumbs in a bowl. Form balls by dropping tablespoons full off sweet potato into the breadcrumbs and roll. 3. Fry each (several at a time) in the oil, rolling to brown all sides. Drain on paper towels. Serve with a dark beer. |
