Trying to come up with some good tasting holiday dishes & still stay within my diet. Ingredients:
3 (15 ounce) cans sweet potatoes, drained |
1/2 cup splenda brown sugar blend |
1/3 cup pecans, broken in pieces |
1/4 teaspoon ground ginger |
1/2 teaspoon salt |
1 1/2 tablespoons smart balance butter spread |
1 (15 ounce) can unsweetened sliced peaches, drained & rinsed off |
Directions:
1. Combine brown sugar, pecans, ginger & salt. 2. Layer half the sweet potatoes in baking dish, then layer half the brown sugar mixture. Repeat. Dot with butter substitute. In 350 oven bake covered for 30min. then uncover, place peaches on top. Return to oven for 10 minutes longer. |
