Sweet Potato And Pineapple Delight |

From a can of sweet potatoes. Ingredients:
23 ounce can sweet potatoes |
1 1/2 cups sugar |
1/8 tsp salt |
1 tsp cornstarch |
water |
1 cup drained crushed pineapple |
reserved pineapple juice |
1/3 cup butter |
chopped pecans (optional) |
Directions:
1. Drain sweet potatoes and place in a shallow casserole dish and set it aside while your prepare the syrup. 2. In a heavy saucepan, combine sugar, salt, and cornstarch. 3. Bring to a boil and boil for 10 minutes. 4. Add water to reserved pineaple juice to make 1 cup and add to the cooked syrup mixture in the saucepan. 5. Pour liquid over the sweet potatoes in casserole dish. 6. Bake 30 minutes at 350. 7. Sprinkle with chopped pecans if desired. |
