Sweet Potato and Lentil Soup |

Sweet potato and lentil soup (mess with the spices... want cinnamon, nutmeg, ginger, allspice, black pepper... need to play with proportions) Needs more backbone. Texture of baby food. Maybe whole potato chunks? Garnishes? Needs way more ginger. Very hearty. Ingredients:
2 cups water |
64 g lentils |
3/4 cup onion |
6 ounces sweet potatoes |
1/2 tsp cumin |
1/2 tsp cinnamon |
1/8 tsp ginger |
1/8 tsp cloves |
1/2 cup cilantro |
1 salt and black pepper |
Directions:
1. 1. Peel and roughly chop the onions and sweet potatoes - can be chunky. 2. 2. Combine with the stock or water, lentils, garlic, cumin, cayenne and turmeric in a pot. 3. 3. Cover and bring to the boil. Simmer until the potatoes and lentils are cooked - about 20-30 minutes. 4. 4. Puree the soup, adding in the coriander and the juice of the lemon. Add salt and pepper to taste (lots of pepper for me). |
