this is one of the SunKist Pistachio Kernels recipes... haven't tried it yet but I'm going to very very soon!! they take a hour to cool and harden... and the nice thing is you leave the shells on for this recipe Ingredients:
2/3 cup packed brown (light or dark) sugar 2 tbsp. orange juice |
1 1/2 tbsp. light corn syrup |
1 bag sunkistĀ® california in shell pistachios |
1/2 cup granulated sugar |
Directions:
1. In a large skillet, combine brown sugar, orange juice and corn syrup. Over medium heat, cook for 5 minutes or until sugar has dissolved, stirring often. Add pistachios and stir until nuts are well coated. In a large bowl, add sugar. Add coated pistachios and stir to coat well. Evenly spread pistachios over 2 foil-lined or parchment paper lined baking sheets. Let stand one hour or until completely cooled (pistachios will harden as they cool). Store in loosely covered container for up to two weeks. 2. Makes 12 servings. |
