Sweet potatos deserve to be used more than at Thanksgiving. This food is low in Sodium, and very low in Saturated Fat and Cholesterol. It is also a good source of Dietary Fiber, Vitamin B6 and Potassium, and a very good source of Vitamin A, Vitamin C and Manganese. Ingredients:
1/2 cup pineapple, crushed |
1 sweet potato, cooked, baked in skin, without salt |
1 tbsp land o lakes fresh buttery tastse spread (margerine) |
1/4 cup pineapple juice |
1/2 tsp ground nutmeg |
1/2 tsp cinnamon |
Directions:
1. Use your microwave to cook the potato. Poke the potato for venting and put it on a small saucer so it doesnt make a mess. Pop it in on high for about 5 minutes. 2. Mix the pineapple, nutmeg and cinnamon in a bowl. Wait on that pineapple juice because we'll want to use it to make the potato the consistency that makes us happy. 3. When the potato comes out, (IT WILL BE HOT), slice it in half and scoop the innards into the bowl with the pineapple. There are vitamins in that skin. If you choose to use the skin then cut it up small and dump it in the bowl. 4. Add the butter and mash the potato / pineapple mixture.
