Sweet Pepper-Tomato Topping |

This recipe is best when freshly made; however, you can cover and chill the mixture (without basil) up to two hours. Just know that the texture of the tomatoes will soften. Ingredients:
2 tablespoons olive oil |
1 tablespoon white wine vinegar |
1 teaspoon salt |
1/2 teaspoon coarsely ground pepper |
2 large tomatoes, seeded and chopped |
1 yellow bell pepper, chopped |
1 green bell pepper, chopped |
4 green onions, sliced |
1/2 cup pitted spanish olives, quartered |
1/2 cup golden raisins, coarsely chopped |
1/4 cup firmly packed fresh basil leaves, chopped |
Directions:
1. Stir together first 4 ingredients in a large bowl. Add tomatoes and next 5 ingredients, tossing gently to combine. Let stand 15 minutes. Gently stir in basil just before serving. |
