Sweet Pepper and Chile Chimichurri

A condiment for beef, chicken, pork, or roasted vegetables.
Ingredients:
1 green bell pepper, stemmed seeded and quartered
2 mild chiles, stemmed seeded and quartered
1 jalapeno pepper, halved
1/4 cup fresh parsley
2 garlic cloves
3 tablespoons pepperoncini peppers, chopped
3 tablespoons red wine vinegar
salt
Directions:
1. In a food processor, finely chop green bell pepper, mild chilies, and jalapeno pepper.
2. Scrape down sides of bowl, add remaining ingredients and pulse a few more times until coarsely pureed, about 5 seconds.
3. Serve at room temperature.
