Sweet Peas and Carrots in a tomato sauce |

Ingredients:
1 tablespoon olive oil |
3 medium carrots, scrubbed and diced |
1 small diced onion |
1 1/2 cups tomato sauce |
1 freshly-squeezed lemon |
2 cups frozen sweet peas |
4 cloves garlic, chopped |
salt and pepper |
1/2 teaspoon dill weed |
Directions:
1. In a pot heat olive oil and add the carrots. 2. Saute carrots for about 6 min on a med-high heat. 3. Then add the onions and saute until the onions are slightly soft. 4. In sequence add in the remaining ingrediants to the pot and bring to a boil, then lower to a low heat and simmer until carrots are tender. 5. Sever with a side of pasta or over rice. |
