This recipe goes with Grilled Pork Chops with Sweet Peach Sauce Ingredients:
1 tablespoon olive oil |
2 cups sliced red onion |
3 cups chopped peeled peaches |
2 cups chopped tomato |
2 tablespoons minced peeled fresh ginger |
1/2 cup cider vinegar |
1/2 cup fresh orange juice (about 1 orange) |
1/3 cup packed brown sugar |
1 teaspoon ground allspice |
1/4 teaspoon kosher salt |
1/4 teaspoon black pepper |
Directions:
1. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onion, and sauté for 10 minutes, stirring frequently. Add peaches, tomato, and ginger, and cook for 2 minutes. Add the vinegar and remaining ingredients, and bring to a boil. Reduce heat, and simmer for 20 minutes. Place the peach mixture in a food processor, and process until smooth. |
