Ingredients:
1 teaspoon(s) brown sugar |
2 tablespoon(s) butter |
2 tablespoon(s) butter |
1/4 teaspoon(s) cinnamon |
4 eggs |
1/4 cup(s) granulated sugar |
1 pinch(s) salt |
2 1/4 cup(s) sliced peaches |
1 teaspoon(s) water |
Directions:
1. Separate eggs. Cream yolks with sugar. Add salt and cold water to whites and beat stiff. Fold yolks into whites. Melt butter in pan and add omelet mixture. Stir with spatula and bang down on stove to settle. Cook over not too hight heat. Finish under medium heat in oven. Cook until top begins to blister. Mix peaches and butter over medium heat. Sprinkle cinnamon and sugar over them. Poiur peaches in center of omelet and fold out on plate. Sprinkle with confectionary sugar and butter. 2. May use ham, cheese, onion or strawberries. |
