This dish was inspired by Tammys Lesueur English Pea Salad Recipe and was very easy to make. I just used what I had in the fridge and it turned out great, so thought I would share with Y'all. Ingredients:
1 can of lesueur english peas, drained |
1 can of sweet whole kernel corn, drained |
1/2 cup chopped sweet vidalia onion |
1/3 cup chopped bell pepper |
1/3 cup roasted red bell pepper, chopped |
1 cup shredded sharp white cheddar cheese |
1/2 cup nanny's sweet pickles, diced |
3 boiled eggs, chopped |
1/2 cup real mayo |
salt and pepper to taste |
tony chachere's seasoning to taste |
*nanny's sweet pickle recipe coming soon! till then, i guess you can use the store bought kind... |
Directions:
1. In a large mixing bowl combine all ingredients, stir, taste, add a little of this, a little of that, taste, taste again, one more time, ok you can stop now... stop... STOP TASTING!
