Sweet Pea and Fresh Mint Couscous

Ingredients:
3/4 cup water
1/4 teaspoon salt
1/8 teaspoon ground turmeric
1/2 cup uncooked whole wheat couscous
1/2 cup frozen petite green peas
2 tablespoons chopped fresh mint
Directions:
1. Combine first 3 ingredients in a medium saucepan. Bring to a boil. Remove from heat; stir in couscous. Cover and let stand 5 minutes.
2. Place peas in mesh strainer. Rinse under warm water; drain well. Add peas and mint to couscous. Toss well with a fork.
