This recipe came from one of my mom's cookbooks called Quilter's Cooking Companion . It's easy to make and has great texture and flavor! Ingredients:
3 cups coleslaw mix |
2 cups cooked brown rice |
2 granny smith apples |
1/2 cup chopped pecans |
1/2 cup frozen orange juice concentrate |
1/2 cup mayonnaise |
1/2 teaspoon dijon mustard |
1/2 teaspoon seasoned salt |
Directions:
1. Chop the apples (I don't peel them). 2. In a small bowl mix the orange juice concentate, mayo, dijon, and salt. In a large serving bowl toss the coleslaw mix, rice, and apples. 3. Mix the dressing with the slaw until well coated. Stir in the pecans. 4. Chill before serving. |
