When grilling up all those lovely summer veggies why not try adding a sweet onion vinaigrette for a nice change. Ingredients:
1/4 cup lemon juice |
1/4 cup white wine vinegar |
1/4 cup basil, chopped |
3 tablespoons extra virgin olive oil |
1 tablespoon dijon mustard |
1/2 teaspoon sugar |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
3 garlic cloves |
1 large sweet onion, cut into 1/2 inch slices |
Directions:
1. In food processor puree everything but the onion. Pour into a bowl and let stand at room temperature for 1 hour so that flavors blend. 2. In mean time grill onion slices. 3. Add onion slices to vinaigrette and serve at room temperature over grilled veggies. |
