Sweet Onion (Vidalia) Soup |

This easy soup can be made with any type of large sweet onion if Vidalias aren't available. We like it plain but you could top it with a toasted baugette slice topped with melted cheese if you prefer. Ingredients:
2 lbs vidalia onions or 2 lbs other sweet onions |
2 tablespoons olive oil |
6 cups beef broth |
1/2 cup dry wine |
1 bay leaf |
1 1/2 teaspoons paprika |
salt and pepper |
Directions:
1. Thinly slice onions. In a soup pot heat the olive oil on medium. Add the onions and sauté for 1/2 hour. 2. Add the paprika, broth, wine and the bay leaf. 3. Simmer for 30 – 40 minutes, remove the bay leaf and add salt and pepper to taste. |
