A great side dish for any grilled meat or fish. Ingredients:
1 1/2 cups buttery round crackers, crumbled (i used ritz) |
6 tablespoons butter, softened |
2 cups thinly sliced sweet onion, like vadalia |
2 cloves garlic, minced |
1 tablespoon minced fresh chives |
3/4 cup milk |
2 eggs |
1/2 teaspoon salt |
3/4 cup shredded cheddar cheese (you could use almost any kind) |
1 pinch paprika |
1 tablespoon chopped fresh parsley |
Directions:
1. Preheat oven to 350 2. In a mixing bowl, combine crackers and 4 tablespoons of butter until well blended 3. Press into the bottom and 1 inch up the sides of an 8 inch pie dish to form crust 4. Refrigerate until needed 5. Melt remaining 2 tablespoons butter in a heavy skillet over medium heat 6. Saute onions and garlic slowly until tender, about 12 minutes 7. To spice it up a bit, I add a little cayenne pepper to this mixture 8. Arrange onions in pie crust 9. Beat eggs, milk, chives and salt until well blended 10. Pour the mixture over the onions 11. Sprinkle with cheese and paprika 12. Bake for 35 minutes or until a knife inserted in center comes out clean 13. Garnish with parsley 14. Serve hot or at room temperature |
