A recipe that I've had for years. Baking time depends on the size of the muffins. Ingredients:
1 1/2 cups flour |
1/2 cup sugar |
1 1/2 teaspoons baking powder |
1/2 teaspoon salt |
2 eggs |
1 cup onion, finely chopped |
1/2 cup butter, melted |
1 1/2 cups walnuts, chopped |
Directions:
1. In a bowl, combine flour, sugar, baking powder, and salt. 2. In another bowl, beat the eggs, onion, and butter until blended; stir into the dry ingredients just until moistened. 3. Fold in walnuts. 4. Fill greased or paper-lined miniature muffin cups 3/4 full. 5. Bake at 400°F for 10-12 minutes or until a tooth pick inserted near the center comes out clean. 6. Cool, for 5 minutes before removing from pan to wire racks. 7. Yield: 3 dozen minis or 1 dozen regular muffins. 8. Note: If using regular-size muffin cups, bake for 20-25 minutes. |
