Sweet Onion Grilled Quesadillas |

SWEET ONION GRILLED QUESADILLAS This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982. Ingredients:
1 large vidalia sweet onion |
olive oil for brushing onion and tortillas |
4 large flour tortillas |
3/4 cup grated pepper jack cheese |
1/4 cup packed fresh coriander sprigs washed and dried then coarsely chopped |
Directions:
1. Prepare grill. 2. Cut onion crosswise into 1/4 thick slices and arrange on tray keeping them intact. 3. Brush both sides of slices lightly with oil and season with salt and pepper. 4. Grill onion on a lightly oiled rack set 5 over glowing coals 4 minutes on each side. 5. Transfer onion as grilled to a bowl separating rings. 6. Brush 2 tortillas lightly with oil on one side and put oiled side down on a platter. 7. Divide onion, cheese and coriander between tortillas and cover with remaining tortillas. 8. Brush tops of quesadillas lightly with oil. 9. With a metal spatula transfer quesadillas to rack set 5 over glowing coals. 10. Grill until undersides are golden brown about 1 minute. 11. Sandwiching each quesadilla between 2 metal spatulas flip quesadillas and grill 1 minute. 12. Transfer quesadillas to cutting board and cut into wedges. |
