Sweet Onion, French Onion Soup |

On WW this is 4 pts per serving. Makes 4 big bowls of soup. Ingredients:
1 tsp extra virgin olive oil |
1 tbsp margarine, 37% oil (icbinrb light) |
6 onions, sliced |
1 tsp splenda |
1 tbsp flour |
2 1/2 cups water |
1 cup croutons, seasoned |
32 ounces beef broth, (swanson) lower sodium beef broth |
4 oz fat free shredded cheddar cheese |
Directions:
1. Heat oil and melt the butter in a pan over medium-high heat. 2. Add in onions and splenda and cook until onion are golden brown. 3. Stir in flour until blended with onions. Add water and broth and heat until boiling. Reduce heat, cover and simmer for 10 minutes. 4. Serve soup into 4 bowls, top with croutons and then cheese. |
