Sweet Onion Cornbread With Cheddar Cheese |

Cornbread with sweet onion and cheddar cheese. Whip up a pot of beans to go alone. Ingredients:
1 1/2 cups yellow cornmeal |
3/4 cup flour |
1/2 tbs. baking powder |
1/2 tbs. salt |
1/4 tps. baking soda |
2 tbs. butter,divided |
1/2 quart buttermilk |
1/2 cup sweet onion |
2 ounces sharp cheddar cheese, shredded |
Directions:
1. Mix dry ingredients together reserve. Melt 2 Tbs. butter in a 9 x9 x2 pan in a 450 degree F oven. 2. Meanwhile, stir buttermilk into dry ingredients; fold in onion and cheese. Bake at 450 degreese F until just firm in the center and lightly browned on the edges, about 25 minutes. Remove; let rest 15 minutes before cutting. Cut into 12 pieces. |
