Sweet Napa Cabbage with Pasta (Curtis Aikens2) |

Ingredients:
8 ounces fresh angel hair pasta, cooked |
2 tablespoons vegetable oil |
1 onion, sliced thin |
2 chinese eggplants, sliced thin |
1/2 head napa cabbage, shredded |
2 medium tomatoes, diced |
1 tablespoon herbes de provence |
Directions:
1. In a non-stick frying pan or a wok, heat oil until smoking. Add the onions and cook until softened, about 4 minutes. Add eggplant and cook for 4 more minutes. Add the cabbage, tomatoes and Herbes de Provence and simmer for 5 minutes. Toss with angel hair pasta and season to taste |
