Healthy, lowfat, and nicely sweet. The vanilla adds just a hint of flavor, and the lemon a bit of tang. Ingredients:
1 cup all-purpose flour |
1 cup whole wheat flour |
1 teaspoon baking powder |
1 teaspoon salt |
1 teaspoon baking soda |
2 eggs, beaten |
2 cups buttermilk |
1/4 cup splenda granular |
2 teaspoons vanilla |
1 teaspoon lemon juice |
1/8 cup oil |
1/8 cup applesauce |
Directions:
1. In a mixing bowl, add flour, baking powder, salt, and soda; stir to mix. 2. Add in eggs, buttermilk, vanilla, lemon juice, oil, applesauce, and Splenda; mix well. 3. Pour batter by 1/4 cup spoonfuls onto preheated skillet over medium heat. 4. Cook three minutes; flip. 5. Continue to cook additional two minutes. |
