I had eaten sausage appetizers several times, wondering why they were so very tender, and realized they had been cooked in a pressure cooker. So I made up a recipe that we liked. I ate most of it myself.
Ingredients:
2lb smoked breakfast sausage
jack daniel's honey smokehouse barbecue sauce (or other sweet bbq sauce)
1/2 t brown sugar
1/2 t lemon juice
Directions:
1. Slice sausage in 1/2 - 1 pieces, or desired size.
2. Place in pressure cooker and almost cover with water. Tighten lid and place rocker on top.
3. Bring to a boil; when rocker begins moving, turn heat down to lowest possible that will still keep the rocker going.
4. Pressure cook for 10 minutes, then let pressure off quickly.
5. Drain sausage; place in big bowl.
6. Mix BBQ sauce, brown sugar, and lemon juice. Pour over sausage and stir gently.
7. Serve with toothpicks and crackers or sweet bread.
