Found this recipe from an old newspaper clipping in my mil's things. Ingredients:
1 cup broth |
1/2 cup brown sugar, packed |
1/3 cup cider vinegar |
1/4 cup soy sauce (i use lite) |
1/4 cup catsup |
2 tablespoons cornstarch |
3/4 cup carrot, cut up |
2 tablespoons vegetable oil |
3/4 cup bell pepper |
3/4 cup celery |
3/4 cup pineapple chunk |
4 cups turkey or 4 cups chicken or 4 cups spam or 4 cups pork |
onion, if you like |
pam cooking spray |
hot cooked rice or chinese noodles |
Directions:
1. Combine first 6 ingredients in a saucepan. Cook over medium heat stirring until thickened. Remove from heat. 2. Spray frying pan with Pam sauté carrots and celery (onion if you like) for 1 minute. Add bell pepper, pineapple and whatever; cook 5 minutes. 3. Add sauce and cook until thoroughly heated. 4. Serve over rice or Chinese noodles. |
