Found this recipe from an old newspaper clipping in my mil's things.
Ingredients:
1 cup broth
1/2 cup brown sugar, packed
1/3 cup cider vinegar
1/4 cup soy sauce (i use lite)
1/4 cup catsup
2 tablespoons cornstarch
3/4 cup carrot, cut up
2 tablespoons vegetable oil
3/4 cup bell pepper
3/4 cup celery
3/4 cup pineapple chunk
4 cups turkey or 4 cups chicken or 4 cups spam or 4 cups pork
onion, if you like
pam cooking spray
hot cooked rice or chinese noodles
Directions:
1. Combine first 6 ingredients in a saucepan. Cook over medium heat stirring until thickened. Remove from heat.
2. Spray frying pan with Pam sauté carrots and celery (onion if you like) for 1 minute. Add bell pepper, pineapple and whatever; cook 5 minutes.
3. Add sauce and cook until thoroughly heated.
4. Serve over rice or Chinese noodles.
