I like to serve this to friends for a casual weekend dinner. I prefer to serve them with mashed potatoes, but you can serve them as an appetizer as well. Ingredients:
3 eggs |
1 medium onion, chopped |
1 1/2 cups dry breadcrumbs |
1 teaspoon salt |
2 lbs ground beef |
2 tablespoons vegetable oil |
3 1/2 cups tomato juice |
1 cup packed brown sugar |
10 gingersnaps, finely crushed |
1/4 cup white vinegar |
1 teaspoon salt |
Directions:
1. In a bowl, combine the eggs, onion, bread crumbs and salt. 2. Crumble beef over mixture and mix well. 3. Shape into 1-1/2 balls. 4. In a large skillet, brown meatballs in batches in oil. 5. Transfer to a greased 13 x9 x2 baking dish. 6. In a saucepan, combine the sauce ingredients. 7. Bring to a boil over medium heat, stirring until cookie crumbs are dissolved. 8. Pour over meatballs. 9. Bake uncovered at 350 degrees for 40-45 minutes or until meat is no longer pink. |
