This kid-pleaser will have your little ones begging to eat their veggies. Add raisins for extra fun and extra anti-oxidants. Ingredients:
1 1/2 lbs carrots |
2 tablespoons light margarine |
2 tablespoons splenda granular |
3 tablespoons lemon juice |
1/4 teaspoon kosher salt |
1/4 teaspoon lemon zest |
Directions:
1. Peel and cut carrots into 1/2 inch diagonal slices. 2. In a large skillet boil carrots in 1 inch of water. 3. Reduce heat; cover and simmer for 10-12 minutes. 4. In a seperate saucepan melt margarine over low heat. 5. Add Splenda, lemon juice, and salt. Bring to boil, stirring constantly. 6. Drain carrots and add sauce and toss gently. 7. Garnish with lemon zest. 8. Optionally, you may add 1/2 cup of raisins. |
