Sweet - Hot Summertime Salad |

I adapted this recipe from one I saw Rachael Ray make on TV. Since I can't have the ever-popular EVOO, and I am not a fan of the celery, I made up my own version. I must say, it is a mighty tasty lunch! Ingredients:
3 tbsp sweet pickle relish |
3 tbsp red wine vinegar |
3 tbsp vegetable broth |
pinch salt (optional) |
1 english cucumber, chopped (1/4 lengthwise, then slice) |
1 small red pepper, diced |
1 cup chopped mushrooms |
1 cup spicy giardiniera vegetables |
1/2 tsp mustard seed |
Directions:
1. Combine relish, vinegar, broth and salt in a small glass, set aside. 2. Combine the rest of the ingredients in a serving bowl, tossing well. 3. Dress with the dressing, cover and refrigerate 1 - 2 hours. |
