Sweet - Hot Summertime Salad

I adapted this recipe from one I saw Rachael Ray make on TV. Since I can't have the ever-popular EVOO, and I am not a fan of the celery, I made up my own version. I must say, it is a mighty tasty lunch!
Ingredients:
3 tbsp sweet pickle relish
3 tbsp red wine vinegar
3 tbsp vegetable broth
pinch salt (optional)
1 english cucumber, chopped (1/4 lengthwise, then slice)
1 small red pepper, diced
1 cup chopped mushrooms
1 cup spicy giardiniera vegetables
1/2 tsp mustard seed
Directions:
1. Combine relish, vinegar, broth and salt in a small glass, set aside.
2. Combine the rest of the ingredients in a serving bowl, tossing well.
3. Dress with the dressing, cover and refrigerate 1 - 2 hours.
