Here is a great twist on a classic appetizer Ingredients:
6 farm fresh eggs |
1/3 cup chilled, roasted sweet potato mashed |
1/8 cup mayo |
2 tablespoons jalapeno pepper puree |
1/4 teaspoon smoked salt |
parsley to garnish |
Directions:
1. Boil eggs for 11 minutes put into ice water bath 2. peel eggs cut in halves 3. force yolks through sieve into a small bowl 4. add roasted mashed sweet potato 5. mayo, jalapeno puree, and salt to taste 6. stir together 7. fit a small pastry bag with large star tip and pipe filling into 8. egg white halves 9. garnish chill 10. serve |
