This is a combination of recipes I decided to try out. It's the traditional way of having black-eyed peas with ham and a little sweet twist. Ingredients:
1c black-eyed peas |
1/2 c diced ham or bacon |
1 t mint |
1 t sugar |
1 chopped onion |
1 t salt |
Directions:
1. Cover peas with water and soak for at least 8 hours. 2. Drain the peas. 3. In medium sauce pan mix ham,mint,sugar,onion and salt and cover with water.Simmer for 5 minutes. 4. Add peas and replenish water enough to cover. 5. Simmer until peas are tender.(about 45 minutes) 6. Add water as needed through the cooking process. |
