Sweet Fried Summer Squash |

This is the only way I've found to get my children to like squash and a great alternative to batter fried squash. Ingredients:
summer squash in 1/2 inch slices, (zucchini, yellow or my favorite scalloped patty pan ) |
3 tbls. margerine |
3 tbls. unpacked brown sugar |
sprinkle of pepper |
Directions:
1. On med.-high heat melt margerine in a large non-stick fry pan 2. Add squash in a single layer, sprinkle lightly with pepper and fry without turning over until they begin to brown on the bottom. 3. Turn slices over and add brown sugar to the tops of the squash slices. 4. After a few minutes as the brown sugar caramelizes and gets real bubbly in the pan turn the the squash over a few times to coat as much as possible before scorching takes place. 5. Remove from heat and let cool a few minutes before serving. |
