These are so darn good. It was a recipe of my Moms. I don't know where she got it. Ingredients:
1/4 cup butter -- softened |
1/2 cup sugar |
3 eggs |
2 cups fig preserves -- mashed w/syrup |
1 cup rolled oats -- old fashioned |
1 1/2 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
Directions:
1. Preheat oven at 375F. 2. Cream butter and sugar. 3. Add eggs and beat well after each. 4. Add fig preserves with syrup. 5. Stir in oatmeal and sifted flour, baking powder, soda and salt. 6. Mix only enough to moisten dry ingredients. 7. Bake in buttered muffin cups for 15 - 20 minutes. 8. Serve warm. |
