Sweet! Ingredients:
8 ounces tricolor rotini |
3/4 cup plain nonfat yogurt |
1/4 cup reduced fat mayonaise |
2 tablespoons honey |
1 tablespoon dijon mustard |
1/4 teaspoon cumin |
1/4 teaspoon salt |
1 can (15 oz) black beans, rinsed and drained |
1 medium tomato, chopped |
1/2 cup shredded carrot |
1/4 cup chopped green onions |
Directions:
1. Cook pasta according to package directions; drain. Rinse under cold water until cool; drain. 2. Combine yogurt, mayonaise, honey, mustard, cumin and salt in small bowl until well blended. 3. Combine pasta, beans, tomato, carrot and onions in medium bowl. 4. Add yogurt mixture; toss to coat. Cover and refrigerate until read to serve. |
