This is a Canadian Living original that I have been using for years. This can be covered and chilled for 4 hours. Ingredients:
1 english cucumber |
1 small sweet onion, halved and thinly sliced |
3 tablespoons white vinegar |
2 tablespoons lemon juice |
2 tablespoons vegetable oil |
1 tablespoon sugar (or less, depending on preference) |
1/4 teaspoon salt |
good pinch pepper |
Directions:
1. With a fork, score the cucumber lengthwise; cut in half lengthwise and slices thinly crosswise. Place cucumber in a bowl with the onions. 2. Whisk together vinegar, lemon juice, vegetable oil, sugar, salt and pepper until sugar is dissolved. toss with cucumber mixture. |
