Given to me by my neighbor. I have yet to make it, but I've heard great things about this pie! My neighbor makes this with a lattice crust top, or you could just top it with a second crust, topped with large sugar crystals. Either way, you need pastry for two pie crusts. Ingredients:
2 pie crusts |
3 1/2 cups rhubarb, finely diced |
1 cup sugar |
1/3 cup flour |
1/4 teaspoon salt |
1/2 cup whipping cream |
1 egg |
Directions:
1. Line a deep dish pie plate with 1 crust. Fill with rhubarb. Mix flour, sugar, salt, cream and egg together in large bowl. Pour over rhubarb. Top with second crust and crimp edges. 2. Bake 15 mins at 425*F, reduce heat to 350*F and bake an additional 25 minutes. |
