This is an adaptation of a recipe I saw in a magazine somewhere. We like our cornbread sweet and have tried many recipes before we found this one. Ingredients:
2 cups flour |
1 cup cornmeal |
3/4 cup sugar |
1 tablespoon baking powder |
1 teaspoon salt |
1/2 teaspoon baking soda |
1 cup buttermilk |
1/3 cup vegetable oil |
2 eggs |
1 teaspoon vanilla |
Directions:
1. Heat oven to 375. 2. Spray loaf or muffin pans. 3. Mix flour, cornmeal, sugar, baking powder, salt and baking soda. 4. Make a well in the flour and whisk in buttermilk. 5. Mix oil, eggs and vanilla in a small bowl and add to the flour mixture. 6. Whisk just until moistened. 7. Can add fresh or frozen blueberries if desired. 8. Bake at 375 for 25-30 minutes. |
