This rice goes the best with blackened chicken or fish or anything super spicy. It's a nice cool compliment. I prefer it with blackened catfish or mahi mahi. Ingredients:
1 lb. glutinous (sticky) rice ( i use jasmine or basmati) |
water |
2 1/2 cups coconut milk |
2/3 cup sugar |
1/2 cup coconut flakes |
Directions:
1. Soak rice overnight in water. 2. Drain and steam rice for 45 minutes or until grains can be pressed with fingers with no hard cores. 3. Put rice into saucepan, add coconut milk, sugar and coconut flakes and simmer on very low heat, stirring occasionally. 4. Simmer until coconut milk is absorbed. 5. Turn on to a plate and flatten with a greased plate or the back of a spoon. 6. Also good served with fresh sliced mangoes or papaya |
