What could be better than a cup of coffee & a slice of this sweet bread Ingredients:
3/4 cup butter - softened |
1/2 cup brown sugar |
4 eggs - lightly beaten |
8 ozs semi-sweet chocolate chips |
1/2 cup raisins |
1/2 cup chopped walnuts |
finely grated rind of 1 orange |
2 cups self-rising flour |
Directions:
1. Pre-heat oven to 325 degrees. 2. Lightly grease a 2 lb loaf pan & line the base with wax paper 3. Cream together the butter & sugar in a mixer bowl until light & fluffy 4. Gradually add the beaten eggs, beating well after each addition. If the mixture begins to curdle, beat in 1 - 2 Tblspns iof the flour. 5. Stir in the chocolate chips, raisins, walnuts & the orange rind. 6. Sift the flour & carefully fold it into the mixture. 7. Spoon the mixture into the prepared pan & make a slight dip in the center of the top with the back of a spoon. 8. Bake for about 1 hr or until a toothpick inserted into the center of the loaf comes out clean. 9. Cool in the pan for 5 mins & carefully turn out onto a wire rack to cool completely. 10. Serve cut into thin slices. 11. NOTE:- Dried cranberries also work well in place of the raisins in this recipe. |
